Locals say 'quem come jaraqui não sai mais daqui': whoever eats jaraqui never leaves.

Small Amazon river fish fried whole until crisp, served at the food counters of markets such as the Feira da Manaus Moderna and simple eateries, usually with farinha and vinagrete.

Why it's made this way: Jaraqui is the most caught and most consumed fish in Amazonas, recognised as intangible heritage by Manaus in 2019 and by the state of Amazonas in 2026.
