Manaus declared this sandwich part of its intangible cultural heritage in 2019.
Buttered pão francês filled with shavings of orange tucumã palm fruit, queijo coalho and fried pacovã plantain, sold at regional cafés and street stands, usually with coffee.
Why it's made this way: It is said to have been popularised in Manaus in the 1960s by students from Parintins and is typical of Amazonas.
