It is made from the ox's tripe, intestines and even feet, and Fortaleza's Mercado São Sebastião cooked a 617-kilo panelada that was homologated as the world's largest.
A heavily seasoned stew of beef tripe and offal, ladled out at the food boxes of Fortaleza's Mercado São Sebastião from early morning and eaten on the spot with rice, farofa or cuscuz.
Why it's made this way: A sertanejo dish found in public markets across the northern Northeast, and one Fortaleza counts among its signature foods.
