It started as seasonal food at June-festival stalls, then the stalls stayed and it became a year-round street meal on Fortaleza's squares and corners.
A cheap disposable plate piled with rice or baião de dois, vatapá or creme de galinha, paçoca and salad, often with carne de sol or sausage, sold from corner stands and plazas.
Why it's made this way: Fortaleza's signature street meal, built from backlands (sertanejo) staples of Ceará.
