The juice is not made from the cashew nut but from the fleshy 'cashew apple' the nut hangs from, which is botanically a false fruit.
Tart, slightly astringent juice pressed from the yellow or red cashew apple, served cold at Fortaleza's beach barracas and juice stands, often next to fried fish or seafood.
Why it's made this way: Ceará is Brazil's largest cashew producer, harvesting roughly two-thirds of the national cashew-nut crop, and the cashew apple is processed there into juice, pulp and cajuína.
