Its signature extra is guariroba, a bitter palm heart from the Cerrado, alongside another Goiás staple, pequi.

A deep, hot pie filled with chicken, pork, pork sausage, cheese, olives and guariroba, sold at feira stalls and lanchonetes in central Goiânia.

Why it's made this way: The recipe is traced to the old capital, the city of Goiás (Vila Boa), about 150 years ago; Goiás's legislative assembly has approved recognising it as state cultural heritage, and IPHAN recognition has been sought.
