Pamonha Goiana

Pamonha Goiana — street food from Goiás, Brazil

Pamonha cars cruise Goiânia's streets announcing themselves with a loudspeaker cry of 'olha o carro da pamonha!'.

Grated green corn cooked in its husk, usually savoury with cheese and sometimes sausage, sold hot from pamonha cars and neighbourhood pamonharias in Goiânia, also fried or baked.

Why it's made this way: The name comes from the Tupi word for 'sticky'; Goiás is Brazil's best-known pamonha state and Goiânia's pamonharias are local meeting points.
