The name started as one shop's brand, a play on 'petit dog' with a little dog in its logo, and became the everyday word in Goiás for any sandwich trailer.
Big griddle sandwiches such as the X-Salada and X-Tudo, built to order in metal trailers and kiosks on Goiânia's streets and eaten late into the night, often with a herby green mayonnaise.
Why it's made this way: Brothers Jorge and Jacob Abdala Rassi opened the first Pit-Dog on Rua 7 in central Goiânia in 1972, and the trailer model spread across the state; Goiânia declared pit-dog gastronomy intangible cultural heritage in 2021.
