In Pará, açaí is traditionally served savory — thick, unsweetened, and eaten with tapioca flour or fried fish — the opposite of the sweetened fruit-bowl version popularized in southern Brazilian gyms.

Deep-purple açaí pulp, mashed and served thick and slightly bitter, ladled from coolers at street stalls with manioc flour or dried shrimp stirred in. Locals eat it as a savory meal, not a dessert.

Why it's made this way: Açaí palms are native to the Amazon estuary around Belém, where the fruit has been a daily dietary staple for centuries, long before it became an export health-food trend.
