Pará's crab is mostly the mangrove crab caranguejo-uçá, pulled by hand from burrows in the mud of the Bragança coast's mangroves.

Shredded crab meat seasoned with onion, tomato, peppers and herbs, packed back into the crab's own shell, topped with toasted farinha and baked until golden. It's sold as a handheld snack at street fairs and boteco counters across Belém.

Why it's made this way: The mangrove-lined coast east of Belém supports one of Brazil's largest crab fisheries, making crab a cheap, everyday street ingredient in Pará.
