Paraná is home to Brazil's largest Polish-descended community, so Curitiba street fairs sell pierogi alongside pastel and espetinhos.
Boiled half-moon dumplings, most often filled with potato and ricotta, served hot with sauce from stalls at the Sunday Feira do Largo da Ordem and Curitiba's night food fairs.
Why it's made this way: Polish immigrants began settling in Curitiba's Pilarzinho district in 1871 and kept making pierogi; the dumpling became a fixture of the city's gastronomic fairs, eaten by descendants and non-descendants alike.
