Pinhão Cozido (Boiled Araucaria Pine Nuts)

Paraná bans harvesting and selling pinhão before an official opening date (1 April for years, moved to 15 April in 2026) so that unripe cones stay on the native araucaria pine.

Big pine seeds boiled in salted water and sold hot by the portion at winter stalls on Curitiba's Praça Osório and Praça Santos Andrade, peeled by hand and eaten on the spot.

Why it's made this way: Pinhão is the taste of winter in Curitiba, sold at the city's winter fairs alongside quentão.
