Bolo de Rolo (Rolled Guava Cake)

It is recognised by law: Pernambuco made bolo de rolo part of its intangible cultural heritage in 2008 (State Law 13.436).
A sponge rolled around guava paste in many wafer-thin layers, sold by the slice at bakeries, cafés and fair stalls across Recife.
Why it's made this way: It descends from the Portuguese 'colchão de noiva' rolled sponge; in Pernambuco the almond filling was swapped for guava, which grew abundantly there, sweetened with sugar from the local mills.
