On Recife's Boa Viagem beach, vendors walk the sand with thermal jugs and ladle it out steaming hot, even in tropical heat.
A thick, well-seasoned broth, most often of beans but also of shrimp, fish or tripe, served in a small glass and topped with quail egg, crispy bacon or olives.
Why it's made this way: Pernambuco claims it as its own: a staple of Recife's beaches and neighbourhood bars, the classic partner to a cold beer.
