The drink is protected by law: in 2014 Recife's city council declared the maltado of the As Galerias snack bar part of the city's cultural, gastronomic and intangible heritage.
A cold, thick shake of vanilla ice cream, milk and malt, served in a glass at the counter of Recife's old-fashioned lanchonetes, above all As Galerias in Recife Antigo, usually with a quick salgado on the side.
Why it's made this way: It arrived with Cuban immigrant Fidélio Lago, who came to Recife in 1928 and set up the As Galerias snack bar in the old port district, where the drink became a Recife tradition.
