Queijo coalho resists heat, so it can be grilled straight over coals on a stick and come off golden and squeaky instead of melting away.
A block of firm coalho cheese on a skewer, toasted over a small charcoal brazier by vendors walking Recife's beaches such as Boa Viagem, often finished with oregano or sugarcane molasses and eaten on the spot.
Why it's made this way: Queijo coalho is a Northeastern cheese made mainly in Ceará, Paraíba and Pernambuco, and the grilled skewer is a fixture of Recife's beaches.
