The sandwich is named after a customer's hometown nickname, not an ingredient — it was invented at a São Paulo bar for a law student everyone called 'Bauru,' after the city he came from.

Roast beef, melted cheese, tomato, and pickled cucumber pressed into French bread, sold at lanchonetes and street-corner sandwich counters across São Paulo. The original recipe, still served at the bar that invented it, uses roast beef rather than the steak many versions substitute today.

Why it's made this way: The sandwich's origin story is anchored specifically to a São Paulo city bar and its regular customer, making it a São Paulo state invention even though the name points to a different town.
