The hand-cranked press used to squeeze the cane is almost always parked directly beside a pastel stand — the pairing is so fixed in São Paulo culture that ordering one without the other looks incomplete.

Raw sugarcane stalks fed through a metal press right in front of the customer, producing a pale-green, foamy juice served over ice, sometimes with lime or pineapple. It's a staple at São Paulo's street fairs, sold from the same stalls as pastel.

Why it's made this way: The pastel-and-caldo-de-cana combo became a defining São Paulo street-fair ritual, cementing the juice's place as the city's default fair drink rather than a generic Brazilian one.
