The dish traces to one family: in the early 1970s Seria's Lee Poh imported a kway-teow-making machine from Singapore and cut fresh noodles from just soaked rice, water, and oil — no flour or preservatives — and customers, not the family, are the ones who coined the name 'Seria Kuey Teow.'
Flat rice noodles are stir-fried hard and fast over high heat with egg, dark soy sauce, bean sprouts, and a choice of seafood or meat, taking on a smoky char from the wok. Seria's food stalls, run largely by the town's Chinese community, are called out by name across Brunei as a go-to source for it.
