One of Bandar Seri Begawan's best-known soto spots, Soto Pabo, started in December 2015 as a side business feeding contractors building the bridge to Temburong, before it became a destination in its own right for its view of Kampong Ayer.

Soto is a spiced beef or chicken broth ladled over rice vermicelli or noodles and finished with fresh chilies and herbs. In Bandar Seri Begawan it's served from riverside kitchens that look straight out over Kampong Ayer, the stilt village built on the water.

Why it's made this way: Bandar Seri Begawan's soto stalls cluster along the Brunei River specifically for the view of Kampong Ayer, turning a bowl of noodle soup into one of the capital's classic ways to take in the water village at mealtime.
