The crackers are fried from a dried, rock-hard disc that looks nothing like food until it hits hot oil and puffs up to several times its size within seconds.

Keropok are crackers made from a dried paste of prawn or fish and starch, deep-fried until light and crisp. Walking tours through Kampong Ayer's boardwalks stop at stilt-house kitchens where vendors fry them fresh alongside kuih for visitors to sample.

Why it's made this way: Kampong Ayer's stilt-house cooks have long sold keropok and kuih to neighbors and passersby along the village's boardwalks, and the snack has since become a fixture of guided walks through the water village for outside visitors.
