The fern is harvested from Temburong's rainforest floor rather than any farm plot — at Sumbiling Eco Village, guests are sometimes sent out to collect it themselves on a jungle hike before it's cooked for their own lunch.

Paku pakis is wild jungle fern, its tightly curled young shoots stir-fried with garlic, chili, and sometimes a splash of coconut milk or shrimp paste. It's served at Temburong's eco-lodges like Sumbiling Eco Village alongside other forest-foraged Iban dishes as a staple side.

Why it's made this way: Because Temburong is Brunei's least developed and most forested district, foraged jungle vegetables like this fern have stayed part of the everyday diet there in a way they haven't in the country's more urbanized coastal districts.
