'Po shopski' simply means 'Shop-style' — the same Shopi people of the Sofia region give their name to shopska salad, Bulgaria's best-known dish.
Bulgarian white brined cheese is baked in an individual clay pot with tomatoes, roasted peppers, and a cracked egg until bubbling, then served straight from the pot with crusty bread for scooping. It's a fixture of taverns and market-adjacent grills around Sofia.
