It's eaten whole — head, tail, and tiny bones included — because the fish is small enough to fry completely crisp.

Tiny Black Sea sprat are lightly floured and deep-fried whole until crackling, then piled onto paper trays with a squeeze of lemon. Varna's seafront stands sell them as the classic accompaniment to a cold beer.

Why it's made this way: Sprat has always been one of the Black Sea's cheapest, most abundant catches, and frying it whole turned a bait-sized fish into Varna's signature beach snack.
