Eru and Water Fufu

The water fufu it's served with is fermented cassava dough — a close cousin of Douala's miondo — showing how differently the same crop is treated across Cameroon's regions.

Finely shredded eru (Gnetum africanum) leaves are simmered with waterleaf or spinach, palm oil, crayfish and smoked fish or cow skin into a rich green stew, scooped up with soft, fermented water fufu.

Why it's made this way: The dish belongs to the Bayangi people of Mamfe in the Southwest's Manyu division, and has since become one of Cameroon's most widely loved comfort foods nationwide.
