Cameroon's mbanga belongs to the same family as Ghana's abenkwan and Congo's moambe — all built on freshly pounded palm nuts, each country's spice blend giving it a different character.

Fresh palm nuts are boiled and pounded to extract a rich orange cream, then simmered with marinated meat, smoked fish and crayfish into a thick, glossy soup. In Buea it's classically ladled over kwacoco.

Why it's made this way: Mbanga soup is a native dish of the Bakweri people, whose home around Mount Cameroon's palm groves supplies the fresh nuts the soup depends on.
