Safou trees fruit only in the rainy months, so this pairing with roasted corn is a seasonal snack that Buea vendors can sell for only part of the year.

Safou (African bush pear) is briefly boiled or grilled until its skin softens and the flesh turns buttery, then salted and eaten alongside corn on the cob roasted over charcoal. Vendors sell both together from roadside braziers around Buea.

Why it's made this way: Safou trees grow throughout Cameroon's humid south, and around Buea the fruit's season lines up with the rainy-season maize harvest, making roasted corn and pear a classic Southwest roadside pairing.
