There's no single fixed recipe — locals argue the dish is defined less by the noodles than by the sauce, often assembled from a dozen-plus separate condiments in the bowl.

Thin wheat noodles are boiled briefly and tossed in a bowl pre-loaded with chili oil, Sichuan peppercorn, preserved vegetables, garlic, and scallion, often with pickled long beans or minced pork.

Why it's made this way: Chongqing's history as a hilly river-trade and dock-labor city favored cheap, fast, intensely flavored food eaten quickly between shifts.
