'Shacha' is the Minnan pronunciation of 'satay' — the sauce arrived with overseas Chinese returning from Southeast Asia and was reworked with dried shrimp, dried fish, garlic and chili.
Wheat noodles are served in a rich, reddish broth built around shacha sauce, with seafood, pork, or offal, finished with garlic oil and chili.
