Gongcheng Youcha (Yao Pounded Oil Tea)

The Yao oil tea custom is part of the UNESCO listing of China's traditional tea practices, inscribed in 2022.

Soaked tea leaves are stir-fried in hot oil with ginger, garlic and peanuts and pounded as they cook, then boiled into a bitter, gingery broth. It is poured over puffed rice, peanuts and other crunchy bits, and bowls are refilled again and again.

Why it's made this way: It is the breakfast drink of Gongcheng Yao Autonomous County in Guilin, and the Yao oil tea custom was added to China's national intangible heritage list in 2021.
