Si Wawa ("Silk Baby" Wraps)

The name literally means 'silk baby' — describing how the paper-thin pancake wraps snugly around its filling, like swaddling an infant.

A palm-sized, paper-thin rice-flour pancake is filled with shredded vegetables — radish, kelp, soybeans, herbs — rolled up, and dipped in a sour-spicy vinegar sauce.

Why it's made this way: The build-your-own format and low cost made it a favorite cheap snack, reflecting Guizhou's mountain cuisine leaning on pickling and acidity.
