Yangyu Ba (Pan-Fried Potato Cakes)

The local word for potato, yangyu, literally means 'foreign taro'.

Cooked potato is mashed, pressed into small flat cakes and fried on a griddle until the outside is crisp while the inside stays soft.

Why it's made this way: It is a Guiyang speciality and a common street snack there, crisp outside and tender inside.
