The toppings are mostly dried seafood, including dried sandworm, a local delicacy, along with squid shreds, fish cake and tiny silver fish.

Thin rice noodles are tossed in a vinegar-based sour sauce and a thick gravy, then topped with dried sandworm, fish cake, squid, beef jerky, peanuts and water spinach. Yellow lantern chili sauce adds heat and fruitiness.

Why it's made this way: It comes from Lingshui Li Autonomous County in southeast Hainan, where about 500 shops and stalls sell it, with around 100 more elsewhere on the island.
