Vendors hack the top off a green coconut with a cleaver right at the stall and hand it over with a straw; once it's drained, many will split the shell so you can scoop out the soft flesh.
Hainan's coconut water is sold straight from the shell at beachside stalls and street markets, chilled and served with a straw, often alongside grilled seafood or coconut-based dishes. Wenchang, on the island's east coast, is especially known for its coconut groves and coconut-based street food culture.
Why it's made this way: As China's only fully tropical province, Hainan is the country's coconut heartland, and drinking it straight from the shell is a defining local ritual.
