Sitiao Baozi (Shanhaiguan Fourth Street Pork Buns)

The name is an address: the shop opened in 1958 on Fourth Street (Sitiao) inside the old walled town of Shanhaiguan, where the Great Wall meets the sea.

Steamed buns filled with pork, the white part of hillside-grown scallions and sesame oil, plus about ten other seasonings. The filling is rich but not greasy.

Why it's made this way: It is Qinhuangdao's best-known bun shop, named one of the city's famous eateries, and a regular stop for locals and visitors in the Shanhaiguan old town.
