Doumo (Savory Millet Porridge)

Despite 'dou' (bean) in the name, the base is ground millet; soybeans and peanuts are only mixed in.

A savory porridge of millet flour cooked with soybeans, peanuts, glass noodles and greens, somewhere between a soup and a gruel. It is a milder breakfast alternative to hu la tang, often with a youtiao on the side.

Why it's made this way: It is a Henan breakfast staple; in Puyang it is counted among the three treasures of the local breakfast.
