Its heat comes from black pepper, not chili — a spice that arrived via the Silk Road, giving the soup its name (literally 'reckless spicy soup').

A thick, starch-bound broth loaded with black pepper, beef or mutton, peanuts, day lily buds, and wood ear mushroom is finished with chili oil and vinegar.

Why it's made this way: The dish traces to Xiaoyao Town in Henan's Xihua County, which still holds an annual hulatang festival.
