It is steamed in individual porcelain bowls or aluminium cups, yet sets firmly enough for the hawker to turn it out on two bamboo skewers, which serve as the handle.

A palm-sized steamed pudding of long-grain rice flour with a little wheat starch or cornstarch, sweetened with white or brown sugar and often studded with red beans.

Why it's made this way: Originating in Taishan in Guangdong, it peaked in Hong Kong in the early-to-mid 1980s when hawkers sold it from push carts; today it is mostly sold in plastic bags, in classic and newer flavors.
