Dengzhan Guo (Lamp-Cup Rice Cakes)

The name means 'oil-lamp cake': each rice cup is shaped like the little saucer of an old oil lamp, and popular stalls sell out so fast that customers wait for the next steamer.

A rice-flour dough is pressed into small open cups and filled with fresh shiitake, pork, soybean sprouts and bamboo shoots, then steamed in small bamboo steamers over high heat for about half an hour. The skin is soft but chewy and the filling well seasoned.

Why it's made this way: It is the signature snack of Yanshan County in Shangrao, northeast Jiangxi, where rice cakes (guo) are an everyday food.
