It's made by literally pounding cooked rice with a wooden mallet — the rhythmic thumping is as much part of the dish's identity as the taste.

Steamed glutinous rice (or millet) is pounded by hand until smooth and extremely sticky, then cut into pieces and coated in sweetened soybean powder or bean paste.

Why it's made this way: The dish reflects the ethnic Korean culinary traditions of Yanbian, where communal rice-pounding was both preparation and celebration.
