Its nickname is 'sticky mouse' (nian haozi), and a Northeast saying pairs it with winter's sticky bean buns: nian doubao in winter, sticky mice in summer.
Soaked glutinous rice is ground to flour, pressed into rounds around red-bean paste, wrapped in fresh perilla leaves and steamed; the leaves give it a herbal scent.
Why it's made this way: A Manchu summer snack eaten across the Northeast, listed among Jilin's specialties for Baishan and sold at Jilin morning markets such as Changbai's, alongside dagao and bean-flour rolls.
