The broth is served ice-cold with actual ice cubes floating in it — even in the middle of a Jilin winter.

Chewy buckwheat-and-starch noodles sit in a tangy, faintly sweet iced broth, topped with sliced beef, kimchi, cucumber, and half a boiled egg. It's a signature dish of Yanbian, Jilin's Korean autonomous prefecture.

Why it's made this way: Korean immigrant communities carried naengmyeon across the border into Yanbian in the early 20th century, and local cooks adjusted the broth — sweeter, more vinegar-forward.
