It took shape in Fushun in the mid-1990s, when the government was encouraging laid-off workers to start small food businesses; vendors dropped malatang's broth and tossed the ingredients in a sweet-sour dressing.

Diners pick ingredients such as potato, kelp knots, tofu skin, wide noodles and fried meatballs. These are blanched, drained and tossed with sugar, vinegar, salt and chili oil, then finished with cumin and crushed peanuts.

Why it's made this way: Voted one of Fushun's ten signature snacks in 2016, it started at stalls near schools. Chains elsewhere often add sesame paste, but in Fushun it is almost never used.
