Jinzhou Xiaochuan (Jinzhou Small Barbecue Skewers)

In the 1980s and 1990s, as bicycle factories closed, Jinzhou grill shops bought up scrap spokes cheaply and turned them into skewers, which became a local trademark.

Meat is cut into small pieces for 'xiaochuan' (small skewers) and cooked by the five steps of 'dip, brush, sprinkle, grill, turn' with a dozen or so seasonings. The menu runs to more than 300 items in nine categories, from lamb and beef to seafood and vegetables.

Why it's made this way: Jinzhou has more than a thousand barbecue shops, its barbecue technique became municipal intangible cultural heritage in 2011, and it was named one of Liaoning's ten famous snacks in 2021.
