Niangpi (酿皮, Qinghai Cold Wheat Noodles)

It's essentially the high-altitude cousin of Xi'an's famous liangpi, but made thicker and chewier to suit the Tibetan Plateau's climate.

Steamed sheets of wheat or highland-barley dough are sliced into thick, chewy strips and dressed with chili oil, vinegar, and mashed garlic, sold from street carts across Xining. Compared to its cousin liangpi in neighboring Shaanxi, Qinghai's version is noticeably heartier.

Why it's made this way: As a Hui Muslim specialty adapted to Qinghai's colder, higher-altitude climate and local wheat and barley, it became a filling, portable street snack that needs no reheating.
