Ele.me delivery data for 2019 showed Shanghai, with under 2.5% of China's population, eating 53% of the fresh-pork mooncakes ordered on the platform nationwide.

Flaky Su-style pastry wrapped around raw seasoned pork and baked, best eaten hot and within a day.

Why it's made this way: Made and sold on the spot by Shanghai food shops, with queues of two hours or more at Guangming Cun before Mid-Autumn Festival; in 1989 over 70 Shanghai shops already sold them fresh.
