Each fritter is fried inside its own oval iron ladle: batter, a fistful of shredded radish and scallion, more batter on top, then the whole mould goes into the oil.

A thick, crisp fritter of shredded radish and scallion in flour batter, sometimes topped with a small river shrimp, deep-fried golden.

Why it's made this way: Vendors once set up at lane (longtang) entrances in the morning or afternoon, catching children as school let out; it remains a nostalgic Shanghai street snack, though now hard to find.
