The name comes from the earthenware jar the ingredients are traditionally served in, not from the chicken itself.

Deboned chicken and vegetables are pre-cooked, skewered, and steeped in a numbing, spicy marinade, then pulled straight from the jar and eaten cold.

Why it's made this way: The cold, jar-steeped format let vendors prepare batches in advance and serve customers quickly, dating back to the Qing dynasty.
