San Da Pao ("Three Cannons")

The dish is served with a performance built in — the vendor throws three rice balls hard against a row of small copper cymbals before they bounce into soybean powder.

Balls of glutinous rice paste are thrown forcefully onto a metal-plate surface, bouncing with a loud clanging sound before landing in ground soybean and sesame powder, drizzled with brown sugar syrup.

Why it's made this way: The theatrical throwing technique turned a simple sticky rice dessert into street entertainment, helping vendors draw a crowd.
