Turkey came to Chiayi because of US Air Force personnel stationed nearby after World War II; local farmers raised turkeys, and in lean years they were cheaper than chicken.
Steamed turkey is shredded over rice, then drizzled with broth and lard, often finished with fried shallot oil and served with pickled radish.
Why it's made this way: It is sold all over Taiwan now, but most vendors advertise their turkey rice as Chiayi-style.
